Russian Beet Salad

In the Winter we warm up with a bowl full of Borscht… in the Summer we keep cool with delicious Russian Beet Salad!

It makes a great appetizer for Russian dinner parties and a unique dish to bring to any pot-luck party or Summer picnic gathering.

It can be made and served a variety of ways.

The most popular method to making this interesting salad involves grinding or julienne-cutting the beets.

You can add walnuts, onions, carrots, potatoes, or other ingredients to alternate the taste and texture.

Serve on a plate by itself or spread over toasted bread.

Make it a day in advance if need be.

Garnish with some scallions for a picturesque plate.

Here is an easy and authentic Russian Beet Salad recipe to start from:

Ingredients:

  • 2 red beets – boiled or baked (To bake, wash and wrap the beets individually in foil and bake at 350 for 50-60 minutes until soft)
  • 2 pickled cucumbers
  • 3 cloves of garlic
  • salt (To taste)
  • mayonnaise (About 1-2 Tbs)

Directions:

Grind beets and cucumbers, and then grind the garlic. Add mayonnaise and salt, then mix thoroughly. Put in the fridge until cool, about an hour.
